Tasty Summer Mojito
Here's what you'll need for a single serving:
1 cup of Ice Cubes
1 to 2 ounces of White Rum (Suit to taste)
10 - 12 Mint Leaves
1 to 2 Tablespoons of White Sugar
½ cup Club Soda
½ of a Lime cut into 4 wedges.
Place the roughly torn mint leaves and one lime wedge into a sturdy glass and muddle*. If you don't have a muddler, you can use the handle end of a wooden spoon. Add 2 more lime wedges and the sugar and muddle again. Do not strain. Fill the glass almost to the top with ice. Pour the White Rum over the ice and fill the remainder of the glass with club soda. Stir, taste and add more sugar (or Rum) if desired. Garnish with a sprig of mint and remaining lime wedge.
For an equally delicious, non-alcoholic version of this drink, replace the White Rum with 4 ounces of chilled Ginger Ale.
